- Cut the avocados in half lengthwise and remove the pits. With a spoon scoop out the ripe contents and place in a bowl. Mash well until smooth.

- Add diced tomatoes and onion, chopped cilantro, lime juice and salt and mix well. If you want for a it of extra flavor you can add 1/4 teaspoon of cumin to the mix.

- Refrigerate for at least one hour before serving with tortilla chips or a Mexican meal like enchiladas or tacos. .
